Tortilla Chicken Casserole

I had a really dumb moment when I was trying to name this dish. Is it a casserole? Is it a lasagna? Wait, is lasagna a casserole? Googling ‘is lasagna a casserole’ made me feel even more ridiculous but I haven’t slept well in many days…so it’s Tortilla Chicken Casserole. 
This was as full as this poor casserole dish could be without spewing bubbling cheese over the sides. Enough for 2 meals! I had intended to cut it into 8 pieces…then I took a piece out… cutting it into 12 pieces is still a very generous serving.
Tortilla Chicken Casserole
Makes 12 servings
Ingredients

8 multigrain flour tortillas
3 cups COOKED chopped chicken
1 tablespoon olive oil
1 cup chopped onion
1 cup chopped red pepper
19oz black beans
14oz canned corn
1 tsp chili powder
3 cups salsa
1 1/2 cups sour cream
1 1/2 cup jalapeno monterey jack cheese, shredded
1 1/2 cup cheddar cheese, shredded
1 tablespoons finely chopped cilantro
Directions
Preheat oven to 350. Spray a casserole dish large enough to fit tortillas. Heat olive oil in sautéing pan; sauté onion and red pepper for 5 minutes, until softened. Mix in chili powder, remove from heat, stir in black beans and corn. 

In a medium bowl, mix salsa and sour cream. Layer tortilla, salsa mixture, chicken, tortilla, vegetables, cheeses. Repeat 4 times, or until you reach the top of the casserole. *NOTE: Stop layering once you reach the top of your casserole dish and top with cheese* Cover and bake for 25 minutes. Uncover and bake 10-15 minutes longer or until cheese is bubbly and browning. Let stand for 10 minutes before serving. Sprinkle with chopped cilantro and cut into 12 pie shaped wedges.

    in my family we called meals like this ‘enchiladas’ :D . Nowadays i would call them ‘layered enchiladas’.

    I do a version of this. I cook chicken or ground beef till brown and add salsa and some miracle whip. I then layer the mixture with corn, black beans, cheddar cheese and crushed tortilla chips. Yummy!

    Our family eats something similar to this. It’s our favorite. We layer flour tortillas, spread mashed black beans onto tortillas, layer of sautéed veggies ( zucchini, bell peppers, onion, garlic, corn) then layer of drizzled taco sauce, then shredded cheese. Layer all that once more,Then stick in the oven until its browned cheese on top, serve w sour cream n chips. We eat this literally as often as we can! I’ll have to try the chicken recipe.

    When you say red peppers do you mean red bell peppers or red chili peppers? And how do you usually cook your chicken first…fry it with the onion and red pepper or boil it or how? :)

    I am making this tonight! I am going to substitute carrot for the red pepper though because peppers cost $4 a piece where I live, but carrots are in ample supply. I will let you know how it works. I can’t wait to bite into this tonight!

      Update: It came out awesome! The carrots were perfect, and my husband is so excited he asked me if he could take it to his friends at work tomorrow! Just a note, make sure your casserole bowl is large enough, I ended up with two dishes (I get my own now, lol.)

    I made this for dinner tonight. And I didnt like it. Maybe because I didn’t measure the salsa (I probably put 2 cups?)and it tasted too rich from the sour cream. And I didn’t like the red pepper in it.

    Hello World!! It is Friday night 9:50pm and I am making this casserole for the FSU game tomorrow GO FSU!!! It sounds devine. What a perfect dish with some bubba burgers in which we will have as well. I thought of putting more chicken in it tonight to make it more meaty for the guys so I added another chicken breast {I am using the frozen chicken breasts from Sams gotta love sams for football cooking lol} anyways I got this casserole recipe from pinterest in which I am addicted to for sure and thank you so much for sharing this my husband and kids are chicken freaks…they say they can eat chicken for the three meals a day so like i said this is perfectoe. I’ll update you on how everyone at the game just loved it because I am sure they will.

      I made something similar last night and I used 3 large cans of chicken breast and it came out great. No one knew it was canned chicken – I just shredded it! My gourmet cooking neighbor was shocked when she asked how I cooked the chicken & I told her it was canned. I always have canned chicken in the house. Each large can = 1 cup shredded chicken.

    I just made this and was dissapointed. I did not know I was suppose to cook the chicken first. After 2 hours of preparing and cooking and doing the dishes while it cooked, I was excited to sit down and eat this. Then I discovered that the chicken wasnt cooked. Luckily I only made a small loaf pan size caserole for my sister and I. Also luckily for her she ate before : ) I dont think I will try this again. I may however use all these ingredients and make wraps next time.
