Grain-Free Almond Butter Cookies

Cookies are the epitome of good mothers. Good moms bake cookies for their kids. Good moms have a plate of freshly baked, still warm cookies waiting as their children walk through the door after school. Good moms figure out how to make cookies grain-free and without refined sugar to suit their lifestyle. Great moms make cookies because they want them…and they share a couple with the kids.

I have done without a lot of foods in these past 5 months and I was never really bothered by it. I have been able to ‘primal’ up most of the things I want but primal cookie recipes are as hard to find as a unicorn. A couple of great looking ones have surfaced in the past couple of weeks (Paleo Parents and Paleo on Main have both posted a recipe) and my desire to have peanut butter cookies hit an all time high. I wanted a freaking cookie…just something to nibble on while I drink my chai latte.

I made a spur of the moment decision to make cookies but there were some challenges. Subbing the almond butter for peanut butter was simple… Trying to figure out how to get the same consistency with almond meal and honey was a different story. I added chia seeds for an extra crunch because I like crunchy peanut butter cookies but that choice is totally yours! The cookies tasted better this morning (in my opinion only, apparently) and I was able to have a cookie with my chai latte..just like I had wanted! Please heed the advice to NOT overcook them…they do not taste good overcooked.

Grain-Free Almond Butter Cookies

Makes 3 dozen

Ingredients

1 cup almond butter

1/4 cup coconut oil

1/4 cup raw honey

1 egg

1 teaspoon vanilla

2 cups almond meal

2 tablespoons chia seeds (optional)

1/2 teaspoon baking soda

Directions

Preheat oven to 350 degrees. Line a baking sheet with parchment paper.

In a large bowl, stir together almond butter, coconut oil, and honey. Beat in egg and vanilla.

In a small bowl, combine almond meal, chia seeds, and baking soda. Stir dry ingredients into wet ingredients and mix well.

Scoop the dough 1 tablespoon at a time and roll into balls. Set the balls on the baking sheet and flatten them with a fork. Bake for 10 minutes, until the edges just start browning. Do not overbake or they will be dry!

    I totally get the pain of going without – it’s not easy! Along with most everything else, I’m not using any sweeteners either except stevia (which has taken some getting used to). What I would do to be able to add a little honey to your peanut butter cookie recipe – yikes!

    Guess I’ll have to continue being a “bad mom”. No cookies ’round here…
