Paleo Pumpkin Chai Tea Latte


I am so fortunate that the primal/paleo community is one of the most friendly communities. I have ‘met’ the most amazing people… people who inspire me, who challenge me, who give me great advice, and who are there to chat any time. One particular friend posted a teaser picture of his Pumpkin Spice Chicken Cacciatore and I nearly drove to California just to get a taste of it. My pumpkin cravings are at an all time high and, as it turns out, he has a bunch of pumpkin deliciousness posted!

It turns out, George isn’t just an awesome cook but he’s really nice, too! When he posted his Pumpkin Spice Chicken Cacciatore recipe, he blogged about me. Then he took it a step further and tagged me on his Facebook page which led to 150 new likes on my Facebook page. Crazy!!! Today, after a nearly sleepless night with a sick baby, the pumpkin cravings took over and I made a George inspired Paleo Pumpkin Chai Tea Latte. :)

Paleo Pumpkin Chai Tea Latte

Makes 2


2 double spice chai tea bags

1 1/2 cups boiling water

1 can organic full fat coconut milk

4 heaping tablespoons pumpkin puree (not pumpkin pie)

1 teaspoon cinnamon

1 teaspoon maple syrup (optional)


Steep the double spice chai tea bags in the boiling water for 5 minutes.

In a small pot, whisk coconut milk, pumpkin puree, cinnamon, and maple syrup. Heat over medium until hot (do not boil). Remove tea bags from water and pour tea into the pot. Whisk to combine and heat to your preference. Use a hand blender to make it frothy and serve, topped with a sprinkle of cinnamon.

You may choose to strain the latte through a fine mesh sieve if you do not like texture.

    I don’t have anything pumpkin in my house right now (out of season), can someone suggest a replacement?

    I just made a coffee version of this (instead of chai) and it’s yummy! Thanks for posting! It doesn’t, however, replace a Starbucks pumpkin latte because that’s what I was expecting. They probably use refined sugar, pumpkin extract, ect…and that’s what I was use to. Needless to say, this is a great recipe but it’s no where near a Starbucks pumpkin latte, if that’s what you’re expecting. ;) Oh and a word of warning: using that much coconut milk in one serving hurts my stomach, terrible sharp pains, so I just wanted people to be aware of that possibility.
