I love the people I’ve ‘met’ over the past few months in the primal/paleo community. If I start listing the amazing people, you will be reading all day so today I will focus on just one. Well, not one…they are a super couple with 3 adorable little blonde boys. You probably already know them, but if you don’t I’m talking about the remarkable Paleo Parents.

Stacy and Matt are the people that convinced me (by their posts) to get my whole family on board with this lifestyle. I was in a place of absolute frustration when it came to my family. How could I be eating one way and them another? How was that feasible in the long term? I had really only seen food bloggers who were single or couples with no kids…until Stacy and Matt.

I was inspired by them and made the big change. I’ve watched my children’s palates grow tremendously over the past couple of months and it’s so wonderful. Today they announced that they were coming out with a kid’s book. It comes out 2 days before Anya’s birthday and I am thinking about just giving it to her as a give because she will, undoubtedly, claim it as her own anyway. She was excited to see the cover of the book and I know she’ll love cooking the recipes with me.

Done? Good! I’ve been wanting to make a German Apple Pancake for a long time but just never did. I found a recipe and decided to just paleo that sucker up! The result was worth the time!! It tasted just like overnight french toast…but with apples and pears! Really, I should have called it German Apple and Pear Pancake but it’s apple-tacular so the name doesn’t matter. This would be a great family brunch dish!

Grain-Free German Apple Pancake

Serves 10

Ingredients

12 eggs

2 cups almond milk

1/3 cup coconut oil, melted

1 tablespoon vanilla

1 tablespoon maple syrup

1/2 cup coconut flour

1 teaspoon baking soda

1/8 teaspoon nutmeg

2 apples, sliced 1/8″ thick

1 pear, sliced 1/8″ thick

1/4 cup coconut oil

1/4 cup maple syrup

1 teaspoon cinnamon

1 teaspoon nutmeg

Directions

Preheat oven to 425 degrees.

In a large bowl, whisk eggs, almond milk, 1/3 cup coconut oil, vanilla, and 1 tablespoon maple syrup. In a small bowl, stir coconut flour, 1/8 teaspoon nutmeg, and baking soda. Mix dry ingredients into wet ingredients and beat well to combine. Set aside while you prepare the apples and pears.

In a small frying pan, heat 1/4 cup of coconut oil with 1/4 cup maple syrup. Stir in cinnamon and nutmeg; cook for 1 minute. Pour the mixture into a 9×13″ baking pan. Spread apple and pear slices into an even layer in the baking pan. Carefully pour the egg mixture over the apples/pears.

Bake for 20 minutes in preheated oven. Reduce heat to 375 degrees and continue to cook for 20-25 minutes.

      It makes such a big tray and there was a bit of concern as to whether or not I would even get any. I resisted eating the rest of it because I really wanted my husband to try it as well.

    Wow…this was the go to Holiday brunch food and we thought we would not be able to make it again. My family thanks you (we had a broccoli quiche this year but they were all disappointed.     This turned out very well, smelled great while it was cooking too. I found it to be a little “eggy” tasting so next time I plan on adding a little more cinnamon & maple syrup, and maybe even shredding the apples instead to get more apple flavor infused into the mixture a bit more. The texture was lovely and we all enjoyed it, thank you so much!

    Made this today….just discovered your site via the Civilized Caveman. This “pancake” is almost souffle like, very light but still satisfying. I couldn’t resist adding rhubarb…so I had the sweet from apples and tart from the rhubarb and it was perfect. (No pears…maybe next time!). Thank you!

    Has anyone tried this with honey instead of maple syrup? Also, would hemp milk work? I have a food intolerance to almonds and trying to do GAPS diet(honey is legal but not maple syrup)

    Just tried this…my tweeks…
    Did not have almond milk, so subbed 1 cup unsweetened applesauce
    And 1 cup water

    Whisked the eggs a LOT in a stand mixer

    Sautéed the apples with the oil, maple syrup, and spices in the pan

    Worked fine and was fluffy like our previous wheaty pancakes
