Pumpkin Mocha Latte


It’s no secret that I love pumpkin. George (aka Civilized Caveman Cooking) put out a pumpkin e-book  and I have been giddy with delight ever since! One day we were chatting about e-books, the next day he had it done….he might be a cyborg or something.

My brain never shuts off…when I see something that sounds good, I have to make it. Then I try to make it better. The pumpkin mocha latte is the product of my desire to make things better. First, there was a pumpkin chai tea latte and now pumpkin mocha latte. I want to curl up under a warm blanket with a good book and drink this all day.

If ‘Eat Like a Dinosaur‘ were available right now, I would snuggle up with my baby girl and read that. You could be doing the same thing when it’s released in March 2012…go pre-order now! ;)

Pumpkin Mocha Latte

Makes 2


1 can coconut milk

4 tablespoons pumpkin

2 tablespoons cocoa powder

1 heaping teaspoon pumpkin pie spice

1 teaspoon maple syrup

1 1/2 cups strong coffee


In a medium sized pot over medium heat, whisk all ingredients together. Heat it to your desired temperature and serve in 2 mugs.
