Grain-Free Lemon Poppyseed Muffins


More muffins. Baking muffins for the kids’ lunches every week means trying to come up with different flavours. When I baked these, I didn’t expect that the person that would like them the most would be my husband. I’m sure at some point I knew that he liked lemon poppyseed muffins…or maybe not… we’ve been together for 16 years so I should know this kind of stuff!

So he loves lemon poppyseed muffins. He also loves eating bananas for breakfast and walnuts for snack but he’s recently traded those foods in for more protein/fat enriched foods. He sought out the advice of the infamous Civilized Caveman on how to get his own beef belly. (If you are unsure of what a beef belly is, check out George’s after picture.) I love how focused Billy is on following George’s advice…he exercises before work, cooks himself breakfast, and today he even brought a lunch!

I love that he was willing to change his lifestyle when I had to. I love that his lifestyle has helped him lose weight easily. I love that he asked for advice from a knowledgeable person. And I love that he can text me that it hurts to sneeze but still want to keep doing the exercises.

Grain-Free Lemon Poppyseed Muffins

Makes 12


6 eggs

1/2 teaspoon vanilla

2 lemons, juiced

1/4 cup coconut oil

1/4 cup honey

1/2 cup coconut flour

1/2 teaspoon baking soda

zest from 2 lemons

1/2 tablespoon poppy seeds


Preheat oven to 325 degrees. Line a muffin pan with 12 liners.

In a large bowl, whisk eggs, vanilla, and lemon juice. Melt together the coconut oil and honey; pour into egg mixture and whisk to combine.

In a small bowl, stir together coconut flour, baking soda, and lemon zest. Pour the dry ingredients into the wet ingredients and whisk until smooth. Stir in poppy seeds.

Fill each muffin cup with a scant 1/4 cup of batter. Bake for 20-25 minutes, until a toothpick inserted into the center comes out clean. Cool for 5 minutes in the pan and then remove to a rack to finish cooling.

    These were excellent. I didn’t have poppy seeds so I used Chia seeds instead. I can’t tell any difference. Chia seeds at Omega 3′s to the mix.
