It doesn’t seem possible that last week we were outside in sweaters and shoes. We woke up to a gruelling -46 Celsius (with the windchill). It’s hard to believe that so many people will never experience having your nostrils freeze or losing feeling in your extremities by simply walking to the vehicle. Or having to plug in a vehicle just so it will start. Or tires that have hardened so much that it feels like you’re off-roading for the first few miles.
So, what does the extreme cold mean for us? Well, this mama has a rule about leaving the house when it’s colder than -30. It just doesn’t happen. The kids and I have been confined to the house for 2 days now and I fear my sanity is slipping away. I’ve spent such a ridiculous amount of time in the kitchen trying to feed them all when I’m accustomed to feeding 2 kids with tiny appetites.
The biggest problem is that they all like something different. And they all dislike something different. It’s sometimes difficult to create meals that they will all eat. For some reason, burgers go over well with everyone. Anya eats hers with a boatloat of mustard, Wylder eats his in little pieces with his fingers, the big boys devour theirs without realizing that there is sweet potato in them. Win, win, win!!

Bacon & Sweet Potato Turkey Burgers
Makes 8
Ingredients
2 pounds ground turkey
1/2 pound bacon
1 cup shredded sweet potato
1/2 cup chopped onion
1 egg
1/2 teaspoon cinnamon
salt and pepper, to taste
Directions
In a large frying pan, cook bacon until almost crisp. Remove bacon and chop into pieces (when cooled).
In a large bowl, combine bacon with turkey, sweet potato, onion, egg, cinnamon, salt, and pepper. Form into 8 patties.
Cook in bacon fat (or coconut oil) for 7 minutes per side; or until cooked through. Serve on a bed of lettuce.

Hey Becky, I don’t include nutritional info with the recipes because a) I don’t have a lot of time to do it and b) the ingredients you use could be quite different than the ones I use. You can use the nutritional calculator on Spark People with your ingredients.

I took the recipe and intead of making burgers, I took the cooked mixture stuffed peppers. YUMMY!
